Macro-Friendly Sheet Pan Chicken Fajita Lettuce Wraps

The best part is when I can find a recipe that's not only delicious but also caters to the entire family's preferences. Oh and easy, 1 pan prep is an extra bonus, right??
That's where these Macro-Friendly Chicken Fajita Lettuce Wraps come in! They're a fantastic swap for traditional fajitas, packed with flavor, and a lighter option for those of us keeping an eye on our macros.
What I love most about this recipe is its versatility. While I enjoy the crisp, refreshing lettuce wraps, I know that my kids prefer something a bit more familiar. So, I simply serve their portions in tortilla shells or crunchy taco shells, making it a meal the whole family can enjoy together. Ingredients:
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 2 tbsp olive oil, divided
- 1 large red bell pepper, thinly sliced
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp oregano
- Salt and pepper, to taste
- 1 head iceberg or butter lettuce, leaves separated
- Optional toppings: diced avocado, chopped cilantro, lime wedges, and low-fat sour cream
Instructions:

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

In a small bowl, mix together the chili powder, cumin, paprika, oregano, salt, and pepper. Set aside.

In a large bowl, combine the sliced chicken, red bell pepper, onion, and minced garlic. Drizzle 1 tbsp of olive oil over the mixture, then sprinkle the spice mixture on top. Toss everything together until the chicken and vegetables are evenly coated with the spices.

Spread the chicken and vegetable mixture evenly across the prepared baking sheet in a single layer.
