Apr 16, 2023I just love this recipe for high protein macro friendly egg cups with turkey sausage, red peppers, and spinach. These egg cups are perfect for a quick and healthy breakfast or snack. They're packed with protein and nutrients, and the big bonus- they're so easy to make! I love recipes like these because they're so versatile. I can change up the ingredients to suit my mood or what I have on hand. For example, switch up the peppers, add mushrooms, green onions, salsa, different kids of cheeses like mozzarella, Laughing Cow or gruyere. I've also made them with different types of proteins, such as chorizo, italian sausage, canadian or crispy bacon. No matter how you make them, these egg cups are sure to please! Ingredients:
- 12 large eggs
- 1/2 cup milk
- 1/4 cup shredded cheddar cheese
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped spinach
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 12 (6-ounce) muffin tins
- 12 turkey sausage patties, cooked and crumbled
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- Grease the muffin tins with cooking spray.
- In a large bowl, whisk together the eggs, milk, cheese, red pepper, spinach, salt, and pepper.
- Pour the egg mixture into the prepared muffin tins.
- Top each cup with a crumbled turkey sausage patty.
- Bake in the preheated oven for 25-30 minutes, or until the eggs are set.
- Let cool for a few minutes before serving.
